Curry Seafood Stew


I literally just threw this together one night and it came out great. It was so easy I couldn't believe it. I include ways to make it much harder on yourself for those of you who are cooking masocists or purists :-).

Ingredients:

1 lb shrimp (I used frozen precooked and cleaned)
1 lb scallops (I used frozen)
2 Tb butter (you can substitute oil if you need to)
1 lb frozen spinach
1 can (14 oz) coconut milk
Curry spices to taste (I used 1 Tbsp of pre-ground curry powder which gave it a mild tang. I would have used Thai curry paste if I had any in the house. You can mix your own spices any way you want)
2 teaspoons fresh lemon juice (a poor sub for kaffer lime leaves but...)

Instructions:

In a large pan or good-sized pot, melt butter over medium heat. Don't let it burn.
Add the shrimp and scallops and saute. Don't cook them all the way...just coat with butter and stir for about a minute.
Add the spinach, coconut milk, and spices and stir until everything is mixed well.
Reduce to low heat and cover the pot.
Let it simmer (not boil) for about 5 minutes or until the seafood is cooked (don't overcook).
Serve in soup bowls. If you wish to add carbs for your non-low-carbing family members or dinner guests, you can serve this dish over rice on a plate.

I'm using Diet Sleuth to calculate the nutritional values but I can't vouch for any of the numbers. DS has a lot of errors and it doesn't calculate correctly. I can't get serving sizes to work so here are (I think!) the amounts for the entire pot of stew (everything is rounded except for carbs/fiber):

Total = 940 grams
Calories = 2029 grams
Protein = 185 grams
Carbs = 29.9 grams
Fiber = 7.7 grams
Carbs - Fiber = 22.2 grams
Fat = 135 grams

I had 2 soup bowls worth and was quite full (I didn't have anything else for dinner). My SO was starving and ate up the rest. That was 2 or 3 bowls worth I think. If you ate this dish with salad or veggies or anything else on the side, one bowl full would be a good-sized meal for most people. About 5.5 carbs per bowl. You could lessen this by adding less spinach or forgoing the lemon juice.
